Pour a small amount of salt in a greasy pan before washing to absorb most of the grease.

Gluten-Free Roasted Yellow Tomato Salsa
Preheat the oven to 375ºF.
Ingredients:
In a roasting pan combine:
2 pints of yellow cherry tomatoes, halved
1 small red onion, diced
3 cloves garlic, chopped
3/4 cup corn kernels
Fresh snipped cilantro
Sea salt to taste
Drizzle with:
Olive oil
White balsamic vinegar
Instructions:
Toss to coat the vegetables.
Roast in a preheated oven until the tomatoes are soft and sweet, about 25 to 30 minutes. Stir the mix half-way through roasting.
Cool. Cover and place in the refrigerator.
Before serving, allow the salsa to come to room temperature.
Add:
Fresh chopped cilantro.
Serve with gluten-free tortilla chips.
Serves 6 to 8.
